Ingredients
- 1 piece cauliflower organic
- 15 slices bacon
- 100 grams cheese, grated I used cheddar and parmesan mixed
- 100 grams ricotta
- 50 grams mascarpone
- 50 grams full cream
- 1 bag spinach, fresh
- 1 1/2 tsp nutmeg
- 1 tsp Himalayan salt
- 200 grams ground meat i used chicken
- 1 small onion chopped
- 3 chunks garlic chopped

Instructions
- Wash cauliflower and remove leaves
- Cook the cauliflower briefly in salted water. Max. 5 minutes
- Meanwhile, you can bake the meat with garlic and onion, and add spinach, till shrunken down. Then add salt and nutmeg. Afterward add ricotta, mascarpone, cream, and cheese till creamy
- Put the cauliflower upside down and remove as much as you can of the hard part, without losing flowers
- Fill with the meat & spinach mix. Make sure it is not too runny
- Put in a baking tray on baking paper, upside down and bake for 15 minutes at 200°
- Take out the oven, turn the cauliflower(that is why you need the baking paper), with the flower on top. Cover with bacon and put in the oven for another 15-20 minutes
- The leftover of the spinach..I used as a side dish, and added some extra spinach and mushrooms
