This super delicious keto pumpkin mash is an easy basic to make in this season. Varieties are endless, and you can make a stash and keep it in the fridge for a while. Divide the cauliflower into florets and wash under running water
Put a pot with a steamer basket and steam the cauliflower florets al dente
Cut the pumpkin in half, remove the seeds and peel and cut into small cubes
Peel the onion and shred
Heat the fat in a large pan and add onion and pumpkin pieces.
Add the spices and stir
Let it fry softly, this will give the pumpkin and onion more flavour. More aroma will be released from the herbs.
Add a cup of water or bone broth and put a lid on the pan for 20 min.
Add the steamed cauliflower to the pumpkin and add the cream or mascarpone and do not boil dry.
Mash the vegetables with a potato masher, a mixer/blender or crush them with a fork
Serve with meat, poultry or fish.
