Keto Chicken & Zucchini with Herb Salsa
This is one of my favorite autumn-dishes. Once you start, you can not stop eating!
It is a super simple and healthy dish, full of vegetables and fresh herbs, and it will be on your table in less than 15 minutes.

- 4 pieces chicken thigh filet chopped in smaller parts
- 2 pieces zucchini
- 10 pieces sun dried tomatoes
- 60 grams chopped fresh herbs we took basil leaves + coriander
- 3 spoons olive oil
- 3 cloves garlic chopped

Instructions
- Bake the chicken thigh fillet pieces
- Meanwhile, chop your zucchini
- Put the chopped garlic, sun-dried tomatoes, and fresh herbs in a blender with some olive oil
- Bake and stew the zucchini in some garlic and olive oil, after a few minutes, add the chicken thigh pieces, and the salsa you just blended, and stew together
